Without any hesitation we can say that great to drink French wines. France produce the most. They consume the most. Haven't try their wines. It's high time to start. We would like to highlight some great suggestion for their wines and hereby you can find food pairing tips as well.
Our first stop in France is Rhone. They are famous of Viognier and Syrah grapes.A superb wine from here is Delas St. Joseph Francois de Tournon (2005). This is a dark ruby red with very nice aromas such as cassis and cherry. It has strong tannic character, but a bit silky. A nice selection for it Duck with peppercorns.
One of the most famous region is Languedoc-Roussillon. Beziers is the capitol this region and it has really fine wines. One of the best is Pinot Noir there. Tortoise Creek Pinot Noir (2008) is a well-balanced, soft and easier wine, fulfilled with violet aromas. Furthermore you can feel the red berry's flavor and the characteristic cherry fruit. Try it with Bourguignon.
West of Carcassone you an find La Noble vineyard. Their Merlot is excellent. It has the aroma of ripe plums, but it is a spicy one with a touch of the green pepper. Dense fruit leads to a smooth finish. We would recommend a food next to La Noble Merlot from 2005, which is Spinach Salad and Bacon.
Try Bordeaux Red Blends from Medoc, France. The Mdoc is situated north of the town of Bordeaux. Wines from Medoc are delicate, medium colored, they are fine and elegant; often tannic when young, harmonious and splendid when matured. Chateau Lamothe Pontac Medoc (2005) Intense purple color with a fruit forward bouquet of cherry, spice and vanilla notes. Rich cherry and black fruit flavors on the palate along with cinnamon and other spices. A lovely balanced wine with elegant tannins. Wonderful now but will also cellar beautifully. This nice wine is delicious with Roasted Mutton.
Wine making tradition are stronger in Minervois region than at lots of other wineries. Cicero and Pline were among Minervois lovers. Minervois wines are full body red wines. Well structured and elegant when young, quite tannic and silky after 2 or 3 years in a cellar. Chateau Maris Minervois La Touge (2004) a powerful red wine in the style of the region. Concentrated aromas of blackberry and currant harmonize with characteristic bouquet of local wild herb or "garrigue", smoke and spice. Full-bodied and rich, with dense ripe tannins that are impressive yet not overwhelming or harsh. Nice mix of depth and finesse. Pair with Herb Crusted Lamb Chops.
